Ok, here we go with the salsa. The ingredients you will need are: cilantro (if you are one of those that hate cilantro, you can use parsley, flat leaf kind). I like to use a handful. I used 4 plum tomatoes in the recipe, 2 serranos, 1 clove garlic, 1/4 of a white, red or yellow onion, juice from 1/2 a lime or you could use lemon, salt and pepper.
Step 1: In a food processor or blender, put your cilantro, serranos, onions, garlic, lime juice, salt and pepper and blend until it is minced. See Photo 2.
Step 2: Add the tomatoes and mince again. I sometimes add tomato juice, if it looks dry. In this recipe, I added about 1/4 cup to 1/2 cup of tomato juice. That’s it, you have fabulous Pico de Gallo.
This salsa has 0 points. You can use it as a salad dressing or a condiment. If you are a “wimp,” you will have to seed and devein the chile. I suggest you use rubber gloves and don’t touch any part of your body that you treasure!!!
