Butternut Squash
 
It seems that a whole lot of you want a recipe for my butternut squash tacos.  So here goes.  You will need a butternut squash (see picture
below of  what they look like), a medium onion (white is preferred because of the flavor) you can use yellow also.  You will also need a few cloves of garlic, 1 tablespoon of olive oil and some ground cumin, salt and pepper.  So here goes.
 
Cut the end off on both ends of the squash.  Peel it with either a
Y-shaped peeler or one like I have in the picture.  It can be somewhat difficult to peel if you don’t have a real good peeler.  Once you have peeled it, cut the long section away from the bulb part.  This is a solid piece.  I look for squashes with long necks.  Then you cut the bulb in half (see picture above) and remove the seeds with a spoon.  Once you have done this, slice the squash in 1/2” slices.  Lay them out (see picture) and slice the onions, mince the garlic, add the olive oil,

ground cumin, salt and pepper.  Sometimes I like to add Mexican oregano, about 1 teaspoon crushed.  Mix it all up with your hands, spread out the squash mixture on the cookie sheet.  Roast in a 450 degree oven(preheated of course) for approximately 20 minutes.  I like to check on it after 15 minutes.  Take a fork and pierce a squash piece to test for doneness.  I also like to roast it long enough to have a few brown areas on the squash. This adds to the flavor.  Thats it!!!  I then make corn tortillas (in a future blog) or use store-bought tortillas  and some homemade Pico de Gallo salsa.  I like to also use cotija Mexican cheese (available in most markets).  I will add pictures and the recipe for the salsa on Wednesday evening.  Sorry I can’t do that tonight (I just don’t have all the ingredients necessary to photograph and make).  But come back tomorrow.  Just think, you will have it all by Friday to make!!!
