Baked Chicken Annatto
 
This is the best baked chicken.  All you need is a whole chicken, 1 package of annatto, found in the Mexican Isle of the grocery store, 1 onion, 1 orange, 2 cloves of garlic.
 
Take the annatto seasoning and break off a piece.  For a whole chicken you will need about 1/3 cup of the seasoning block.  Take the block of seasoning and break off a piece.  Add water to make a paste.  Rub the paste all over the chicken.  You want a nice coating on it, don’t be skimpy.  Cut the onion and orange in half and stuff it along with the garlic in the cavity of the chicken.  You don’t need the orange but I like the flavor it gives.  Bake the chicken in a 375 degree oven for 1 hour or until a thermometer registers 175 degrees.  Remove from the oven and let rest for at least 15 minutes.  The temperature should go up to 184 degrees.  Your chicken is ready to eat.  Serve with fresh cooked pinto beans, salad greens and homemade corn tortillas!!
