Lunch Idea
 
Well today I stood in my kitchen, hungry, and not a clue what I wanted to eat!! Sound familiar??  Well, I had some high fiber whole wheat tortillas that I bought at the grocery store, yes, BOUGHT.  I really liked the idea that they only had 80 calories, 3 grams of fat and 14g of fiber!!!  Wow!  I had them left over from last night (that will be a different posting).  I cut up a potato in a medium dice and sauted it along with onions until halfway done.  I then added a small cut up zucchini and sauted for a few minutes.  Then I added 1 whole egg and 2 egg whites, 2 slices of soy cheese and seasoned with salt and pepper.  I warmed up the tortilla on top of my gas burner.  If you have electric, you can either heat up a cast iron grill or skillet or wrap in a towel and microwave for a few seconds.  I wrapped up the egg mixture,like a burrito in the tortilla.  Served with cantelope and Lunch was ready.  It was so satisfying and delicious.  Although very simple, it satisfied what I wanted.  
 
The tortillas were bought at Raley’s.  See picture below.  What a great way to get in a whole lot of fiber.  You could vary the “filling” with other vegetables or no vegetables, but you do want to get those veges in daily.  I didn’t use salsa, which is actually unusual for me, but I wanted to really taste the ingredients. Next time I will use my salsa!! Some fresh tomatoes would have also been delicious also.
