Spinach Linguini
 
I absolutely love pasta.  Any type of pasta.  I am always thinking of how different can I make it.  I love zucchini, carrots and garlic.  You will need the following ingredients.
 
2 teaspoons olive oil
1 package of spinach linguini (fresh is best)
2 long zucchini, thin slice
2 long carrots, cut in rods
3 to 4 cloves of garlic, minced
1 medium onion, sliced
Soy cheese (Provolone)
 
Take a “Y” potato peeler and peel the zucchini as shown in the picture. I sliced the carrots as a julienne cut because I could not find wider carrots.  So you will have to cook the carrots for a minute before you add the other vegetables.   Mince the garlic and start the water boiling for the linguini.  When the water starts to boil, salt it and add the linguini.  You only have to cook the pasta for 2 to 3 minutes since it’s fresh.
 
Put olive oil in a large skillet.  Add the carrots and onion, saute  for 1 to 2 minutes and then add the zucchini, and garlic.  Saute for just a 1 minute.  The zucchini will cook quickly.  Add the cooked linguini to the vegetable mixture.  If it seems a little dry, add some of the pasta water.  Grate cheese over the top and serve.

arrange the slices for easy access
cook carrots for 1 minute then add the zucchini, onions, garlic
Using a Y peeler, cut long strips
Saute the veges until crisp tender.  
Sprinkle with cheese.
