Tonights Dinner
 
The plate measures 9 inches across.  Why do I mention this you ask?  Because I want you to see how “full” the plate looks and how you immediately know that you will be very satisfied when done.  
 
If you are using bigger plates, downsize!!  You will eat as much as you plate!!  
 
I took the pork chops out of the freezer and placed them in a bowl of very cold water for about 1 hour. Because they are frozen and cool the water as they thaw, it’s ok to leave out for the hour.  I then grilled them on my George Foreman Grill (just love this tool :)
 
Remember the rice I made to serve with the Cornish Hens? I had leftovers and “enhanced them a bit” by quickly sauteing chopped zucchini, onion, 1 small clove garlic, minced, and 1 tomato chopped. Saute until the zucchini is half done (4 minutes or so) and add the chopped tomato. Season with salt and pepper. Saute for another 1 to 2 minutes.  Add to your leftover rice pilaf, heat  thru and serve.
 
I added a chopped salad of romaine, onions and tomatoes along with a salad dressing of olive oil and red wine vinegar.
 
This was such a satisfying meal.
