Cornish Hens
 
Do you love chicken but looking for something different?  If you have never eaten these little beauties, then you must try them.  Just 1/2 of a hen (3 3/4 oz) skinless is 3 points.  With the addition of 1 slice of bacon you will love the flavor.
 
I served it with a instant brown rice pilaf of vegetables I had in my refrigerator. You can use the ones you love.
 
For 2 people:
 
1 cornish hen (thawed)
2 slices of bacon
salt and pepper
 
Preheat your oven to 400 degrees.  Season the hen with salt and pepper and place the bacon on top with some of it going inside the hens cavity (see picture below)
 
FOR THE RICE PILAF:
 
I use Uncle Bens Instant Rice.  Make the recipe for 2 people.  I used Mushroom Stock (see picture of jar) in place of water.  It gave the rice a subtle mushroom flavor and it really adds a great flavor.  
 
While the rice is cooking I chopped up carrots, celery, onion and raw cauliflower and of course a little garlic.
 
Saute the vegetables in 2 teaspoons of olive or vegetable oil until crisp tender.  I like the bits of brown (carmelization) that get on some of the pieces of vegetable.  
 
Combine the vegetables with the rice.  Stir well. Serve with your cornish hen.
