Meatloaf Sandwich
 
If you want a great meatloaf sandwich you have to start with the meat loaf.  I’ve hundreds of recipes and try almost everyone I see and make up my own.  I hardly ever make the same one twice. Here a few versions.  Change what you don’t like.
 
This is my own favorite.  I make this as a “meat mixture” to make meatloaf, meatballs, tacos, anything you use ground beef for.  Make up a large batch and freeze it.  
 
ALL PURPOSE GROUND MEAT MIX
 
Use this mix in most casseroles that call for a meat mixture like the Mini Meat Loafs, Meat Balls, Salisbury Steak.  This recipe will make 3 meatloaves and 4 meals of meatballs.
 
24 ounces tomato sauce
3 cups dry bread crumbs
4 eggs, lightly beaten
1 cup onion, finely chopped
1 cup green pepper, finely chopped
1/2 cup carrots finely chopped
2 teaspoons salt, optional
1 to 2 teaspoon dried thyme, crushed
1 to 2 teaspoon dried marjoram, crushed
8 pounds lean ground beef or 4 lbs lean ground beef & 4 lbs ground turkey
 
FOR THE MEATLOAF:
Shape half the meat mixture into three loaves and place in a large high sided baking dish.  Don’t allow the loaves to touch while baking.  Bake at 350 for one hour.  Cool; wrap in heavy duty foil; label and freeze.  To serve, thaw loaves and bake in 350 degree oven for 30 minutes or until heated through.  Or you can bake in muffin tins for individual loaves.  They bake in approximately 20 minutes.  If you are going to freeze, bake 1/2 way, cool and freeze.  Nutritional info:  Per serving: 332 calories; 21.2g fat; .9g fiber; 1/2 starch; 3 1/2 lean meats; 1/2 vege; 2 1/2 fat.
 
Another version:
BARBECUED MEAT LOAF
 
1 cup drained canned pinto beans
1/2 cup finely chopped onion
1/3 cup finely chopped green bell pepper
1/4 cup dry breadcrumbs
2 teaspoons low salt Worcestershire sauce or regular
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon hot sauce
1 garlic cloves, minced
1 large egg white, lightly beaten
1/3 cup barbecue sauce, divided
3/4 pound ground round
1/2 pound lean ground pork
cooking spray
 
1.  Preheat oven to 350.
2.  combine first 10 ingredients in a large bowl, stir in 1 tablespoon barbecue sauce.  Crumble ground round and ground pork into bowl, stirring just until blended.
3.  Shape mixture into an 8 1/2 x 4 inch loaf on a broiler pan coated with cooking spray.  Brush 2 tablespoons barbecue sauce over meatloaf.
4.  Bake at 350 for 1 hour.  Brush remaining barbecue sauce over meat loaf.  Bake an additional 10 minutes or until done.  Let stand 5 minutes before slicing. This may be a WW recipe, I really don’t know.

Good Eats Meat Loaf

1/2 cup dry breadcrumbs, seasoned
1/2 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1 teaspoon chili powder
1 teaspoon dried thyme
1/2 onion, roughly chopped
1 carrot, peeled and broken
3 whole cloves garlic
1/2 red bell pepper
12 ounces ground chuck
12 ounces ground sirloin
1 1/2 teaspoon kosher salt
1 egg
 
For the glaze:
1/2 cup catsup
1 tablespoon ground cumin
Dash Worcestershire sauce
Dash hot pepper sauce
1 tablespoon honey
 
 Heat oven to 325 degrees F.
 
In a food processor bowl, combine croutons, black pepper, cayenne pepper, chili powder, and thyme. (I make my own croutons by using my 1 point bread.  I toast the bread then rub it with a garlic clove.  This will give the bread a nice “garlicky” flavor. Pulse until the mixture is of a fine texture. Place this mixture into a large bowl. Combine the onion, carrot,garlic, and red pepper in the food processor bowl. Pulse until the mixture is finely chopped, but not pureed. Combine the vegetable mixture, ground sirloin, and  ground chuck with the bread crumb mixture. Season the meat mixture with the kosher salt. Add the egg and combine thoroughly, butavoid squeezing the meat.
 
Pack this mixture into a 10-inch loaf pan to mold the shape of the meatloaf. Onto a parchment paper-lined baking sheet, turn the meatloaf out of the pan onto the center of the tray. Insert a temperature probe at a 45 degree angle into the top of the meatloaf. Avoid touching the bottom of the tray with the probe. Set the probe for 155 degrees.
 
Combine the catsup, cumin, Worcestershire sauce, hot pepper sauce and honey. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes. 6 servings; 25min prep; 45 min cook
 
Remember, you can add, delete, change any ingredient.  make it your own.
