Really Good Chicken
 
This was really good chicken.  It is so easy to make and the leftovers (if you have any) are really good also.  If you have kids that like to cook, this is really easy.  If they don’t cut up food then you could do this ahead for them.  Just put the potatoes into water until they need them.  Or you make ahead and simply reheat.    
 
I served it with a side salad.  The nutritional info is as follows:  Dish serves 4, each serving is 496 calories; 12.9g fat and 5.7g fiber.  This is a Kraft Food recipe.
 
4 bone in chicken thighs
4 large potatoes, red (or sweet) cut into wedges
1/4 cup zesty Italian dressing (I used Kraft)
1/4 cup grated Parmesan Cheese (DON’T USE THE STUFF IN THE GREEN CAN)
 
Preheat oven to 400 degrees.  Put chicken and potatoes in a 13x9 inch baking dish.  Salt and pepper to taste.  Pour dressing over chicken and potatoes; Make sure all pieces and potatoes are well covered with the dressing and sprinkle with cheese.  
Bake for 1 hour or until chicken is cooked through (180 deg).  Sprinkle with chopped fresh parsley or other herb.

You can use any Italian dressing you like.  
With a side of salad, it makes a great meal.  Light and fresh tasting. I used a little feta cheese in the salad.
