Corn Chips 101

Hi:  Well I thought today I would discuss making corn chips.  All you need is a package of corn tortillas, oil spray in a can ala Pam, Kosher salt, and any other seasonings that you want.  You will get to the point that you know what you like.  Preheat your oven to 400 degrees.  Now, take some of your tortillas and cut them up in 4 sections.  You can do 8 but it sure takes a long time to lay them out on the tray.  Once they are all cut, lay them on the tray like the picture.  I like to do 2 trays at once.  Spray them the the oil spray and sprinkle on the seasonings.  I like to use plan kosher salt.
Sometimes I use garlic salt.  Ground cumin is also tasty.  Then I put them in the oven for 12 minutes.  Sometimes it takes 13 to 14 minutes.  It depends on your oven.  Just keep watching them after 12 minutes.

Remove when crisp and light brown.  Cool and put in a plastic container where they will keep fresh for 5 or so days.  But they won’t last that long.  They are 1 point for every 6” tortilla that you cut up.  Take them to your favorite Mexican restaurant and replace some of the chips you get in the basket with yours.  Yahoo!!!
