Beef & Orange Stir-Fry
 
How many stir-fry recipes can you make?  The list would be endless because you can make one out of beef, chicken, pork, turkey, fish, veges, tofu, etc.  Not only are they quick, but you can make them very healthy.  These are not the ones you buy at those famous Asian fast food places.  Serve in a take out Asian container!
 
As for the noodle part, you have many ingredients available to you.  I happened to use what I had in my pantry, Brown Rice Spaghetti.  I normally like to use soba noodles.  The brown rice pasta is delicious. It is made from organic brown rice flour and this particular brand (see picture) is produced in a gluten-free facility and certified organic by the California Organic Farmers.  For each 2 oz serving there is 210 calories; 2g fat (1g is saturated), no trans fats, 0mg chol; and only 5mg of sodium; 190mg potassium; 44g carb; 3g fiber; 3g sugar and 4g protein.  
 
As a side note regarding 100% whole wheat pasta.  It is much more nutritious in that it contains for each 2 oz serving 180 calories; 1g fat; no saturated and no trans fats, cholesterol and has 0mg sodium; 42g carb; 6g fiber; 1g sugar.  It is made from durum whole wheat flour & semolina blend, wheat fiber, niacin, iron and folic acid.
 
The brown rice pasta is great for those of you that cannot eat gluten.  
 
Back to the stir-fry.  You can use brown rice, bulgur, or any other grain you love.  Just don’t use white rice or refined flour products!!!  
 
As for the recipe it will serve 4.  You will need the following:
 
3 oranges, zested, peeled, sliced
3 garlic cloves, minced, or more
2 tablespoons lite sodium soy sauce
1 1/2 pounds boneless sirloin, remove all visible fat
1 tablespoon cornstarch, for thickening the sauce or you could use rice flour
1 to 2 tablespoons canola oil
6 scallions, green part only, cut into 1 inch lengths
either steamed broccoli or bok choy for a side (add a few drops of sesame oil)
 
Follow the pictures below:  Prep all ingredients first.  After you prep, for the sauce, mix in a small bowl the zest and juice from 1 orange, garlic and soy sauce.  Set aside.
