Hearts of Palm Salad
 
Here is another great “to go” salad.  Again no mayo to worry about.  It’s easy and you can make it the day before.  I have never frozen it, but it would be interesting to try.  Anyway, it’s an easy side dish to make for your grilled chicken, beef, burgers, or?  READ the recipe TWICE, once to get a general idea and the next time to check off what you have to buy. The secret is to prep all your ingredients first.  Now you’re ready to mix it all together.  Small children love to add the ingredients for you.  So if they are prepped first, it will be very easy for them to “dump” the ingredients in a bowl.  Off on a tangent again!!  Back to the recipe.  Just follow the pictures.  For 4 to 6  servings you will need the following:
 
1 each 16 ounce can black beans, drained
1 each 10-ounce package frozen corn, thawed, drained or fresh would be great
1 each 7 1/2 ounce can hearts of palm, drained, cut into 1/4 inch thick rounds.  I bought mine at Smart and Final.
2 large tomatoes, seeded, diced
1/2 red onion, minced
1/2 cup or more chopped fresh cilantro
1/4 cup olive oil
3 tablespoons fresh lime juice (3 limes)
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon Mexican oregano
 
Mix all ingredients as shown below.  Be sure to season with additional salt and pepper if needed.
