Blackberry Salad
 
No there is no big long recipe.  I had some leftover blackberries and thru them in my salad.  I love mixing fresh fruits in salads.  This makes for a much more interesting salad.  A Rice Wine Vinaigrette (sweet) is delicious on this salad and other fruit.
 
Makes 2/3 cup
1/4 cup rice wine vinegar
4 teaspoons honey
2 teaspoons Dijon mustard
2 teaspoons finely squeezed lime juice
1/4 cup vegetable oil
coarse Kosher salt and ground pepper
 
In a medium bowl, whisk together vinegar, honey, mustard, and lime juice.  While whisking, add oil in a slow stream until combined.  Season with salt and pepper.  This will last up to one week in the refrigerator.
 
VARIATION:  you can also add chicken pieces or meat.
